We’ve all heard that an apple a day keeps the doctor away, and the newest variety might be able to keep in the fridge for a year.

The Cosmic Crisp Apple, named for the bright spots on its skin, has been in the works for the last two decades as researchers and farmers have bred the new apple which is a mixture between an Enterprise and Honeycrisp apples.

Horticulturist Bruce Barritt along with researchers at Washington State University’s tree fruit breeding is behind the fridge friendly apple. They say that the acidity of the fruit is what supposedly prevents it from browning as fast as other apples.

“The Cosmic Crisp® apple demonstrates how the science of breeding and the art of imagination can work together to create an utterly new and delightful apple,” they say, adding its “natural balance of acid and sugar … give them an unmatched sweetness, making them perfect for snacking, baking and entertaining.”

There will only be around 450,000 boxes of the fruit that will hit store shelves this year, but in 2020 that number is expected to rise to more than 2 million.
